Know what kind of fish is "in season" locally, or ask the gentlemen who run the place where the fish you're interested in is from. Also know what a fresh whole fish looks like. At times I've seen some variation in freshness and simply chose a different fish if there was any cloudiness in the eyes of the fish, for example. Overall, our family loves having a great variety of fresh fish to choose from, and we travel a good 20 minutes to get our fish there every Friday. ”
